CHILlI AND LIME GO HAND IN HAND. THIS IS A SLIGHTLY DIFFERENT TAKE ON JESS PRYLES' ZESTY CHAR GRILLED CHILE LIME WINGS
1 kg chicken wings - cut into nibbles if preferred
1 tbsp Hardcore Carnivore Red
1/2 tbsp Hardcore Carnivore Amplify
1 tbsp chilli paste
Juice of 1 lime
Method - Prep
In a small bowl. mix together the Hardcore Carnivore Red with the chili paste and lime juice. Check for consistency and heat profile,.adjusting as required.
Add marinade to wings and set aside.
Method – Cooking
Setup grill for 2-zone cooking and preheat to a medium/ high heat.
Cook wings on indirect side of the grill until 72*C internal temperature before searing over direct heat, being careful not to over char.
Remove wings from grill once internal temp of 74*C is reached.
Place wings in a large bowl, and finely sprinkle with a fine amount of Hardcore Carnivore Amplify rub as a finishing dust
Move to serving plate and garnish with parsley and lime zest
